Philippine Adobo (Chicken or Pork) Vicky's Philippine Chicken Adobo (29K)

Highly recommended for a first try at Philippine cooking. Impress your dinner guests, call this dish by its Philippine name. Adobong Manok is the chicken version, Adobong Baboy is the pork version

Ingredients

  • Chicken legs, thighs, breasts, wings, etc.(about 3 pounds),or same amount of pork cut into approximately 1" cubes
  • 1 1/2 cups vinegar
  • 1/2 cup soy sauce
  • 5 garlic cloves, peeled
  • 2 bay leaves
  • 1 Tablespoon coarse ground black pepper
Combine all ingredients in large glass casserole bowl. Cover and refrigerate for two hours or more.

Place chicken or pork in large heavy saucepan or frying pan. Do not use an aluminum saucepan! Cover with entire marinade mixture.

Bring to boil, then reduce heat, cover, and simmer 30 minutes.

Remove lid, increase temperature to medium heat. After 5-10 minutes the marinade will be nicely browned. That's it! Enjoy!
